How can we explain why a needle in the foot can affect problems in the head?

One  of the reasons why the medical  profession are so sceptical about acupuncture is because they cannot explain the concept of accessing energy  with needles to influence a persons organ network. The following is one theory put forward by the scientists : this takes us back to the development of the embryo. It has been noted that as the embryo cells start to divide they separate into groups and fold lines appear to establish a boundary between each group of cells.  This differentiation along the fold lines enable the different groups of cells to become our organs and organ systems. These embryonic folds become our channels of connections or meridians? What do you think of that explanation?
